The yellow stuff inside a cooked crab is the crab’s hepatopancreas. This is a gland inside the crab that works to produce digestive enzymes and filter impurities from the crab’s blood, similar to our body’s digestive system.

Is it OK to eat the yellow stuff in crabs?

The hepatopancreas of a crab is also called tomalley, or crab “fat”; in crabs the tomalley is yellow or yellow-green in color. Particularly when eating steamed or boiled crabs, it is considered a delicacy.

Where is the poop inside of a crab?

The crabs poop in their shells and clean it out with their little back legs. If you are using an Eco Earth substrate you won’t notice the poop. it’s the same color as the EE or coconut husk. If you have sand, it’s the little chunks, almost shaped like tubes, of brown stuff that ends up all over the tank.

Maryland crabs are the best because of the “mustard” as we call it, that bright yellow liquid, that sweetens the meat of the crab. This is actually the hepatopancreas, a main component of the crab’s digestive system that looks like tubes acting as the crabs liver and pancreas.

What is the orange stuff inside a crab?

If you have a female crab and you see bright orange stuff inside, that is edible. It’s the roe or eggs, also called “coral” in shellfish. Coral is delicious when it’s warmed and served on toast or used in crab cakes. You can also add it to crab soups; it’s the key ingredient in she-crab soup.

I’ve also heard people call it the crab’s guts (which isn’t too far off), and even crab poop! Yuck! As we went over, it’s actually the crab’s hepatopancreas. The hepatopancreas also works as the crab’s blood cleaner, similar to our body’s liver.

From my experience there are two things that cause crab meat to become mushy. Either the crabs were over cooked or the crabs died and the bacteria began breaking the meat down prior to steaming. I had some crabs that I steamed and ate 1 right out of the steamer.

Can you eat crab raw?

All crabs (crab legs, whole crabs and crab meat) should be cooked. It’s just about impossible to eat a raw crab. The meat is so moisture-dense that picking it from the shell is a futile endeavor.
