They may be most associated with Dublin, but cockles are available all over the world. Their small, heart-shaped shells contain a small, delicate morsel of flesh that can be eaten raw, steamed or boiled.
Do you need to purge cockles?
They should always be purged, clams especially. Different clams need different purging times, too, depending on how and where they live. Hard shell clams in clean sand, like Eastern surf clams, cockles and quahogs, tend to be easier to purge than open-shelled clams like steamers, horseneck clams and geoducks.

Clean and brush the shell. Soak blood cockle in the water with salt (1/2 tsp) and lime juice (1/2 tsp). Soak for 1 hour. In the pot, boil clams and bay leaf for 20 minutes.
How do you cook fresh cockles?
Bring a cup of water to the boil and add a splash of lemon juice or white wine vinegar. Place the cockles in the pan, and cover. It will only take a couple of minutes for them to cook, and then shells to spring open. The orange cockle inside can then easily be picked out and eaten.

Add the mussels, microwave at full power for about 2 minutes, or until the shells open. In the same liquid, microwave the cockles, then the pipi, tuatua or clams until they open (1-2 minutes).
